Coconut Applesauce Loaf

This loaf is good, not amazing, but definitely filling, tasty and healthier than some loaf recipes I’ve seen (and made) in the past!

The recipe I adapted this from: ( had more sugar than my recipe, and no doubt it probably tasted better for it. However, my summer wardrobe is a little snug so I was attempting to make something healthy. Of course all my good intentions went out the window when Rosie brought her icecream to work!! (amazing by the way – you guys should definitely make it!).

So here it is – next time I will probably increase the apple sauce content to 1 cup (it was a little dry – definitely still edible though)

Coconut Applesauce Loaf

1/2 cup sugar
1/2 cup coconut
2 large eggs, at room temperature
1/2 cup coconut oil
1 1/2 teaspoons vanilla
3/4 cup whole wheat flour
3/4 cup all-purpose flour
1/4 teaspoon baking powder
1/2 teaspoon baking soda
1 1/2 teaspoons cinnamon
1/2 teaspoon ginger
1/4 teaspoon nutmeg
1/2 teaspoon salt
1/2 cup rolled oats
3/4 cup applesauce

Preheat oven to 180 C. Coat a loaf pan with oil or butter (I used coconut oil and it was fine).

Whisk the sugar, eggs, oil and vanilla together in a large bowl. Add both flours, the baking powder, baking soda, cinnamon, ginger, nutmeg, and salt to a medium bowl then whisk to combine. Add the dry ingredients to the wet, mixing just until incorporated. Stir in the oats and applesauce until incorporated.

Transfer the mixture to the prepared pan. Bake for about 1 hour.  You are probably meant to let it cool for a while but I had to eat a piece straight away, coated with yoghurt and pineapple of course!
